Cucumber Bites with Lox & Caper Cream CheeseI don't think there anything in the world that my kids love more than these cucumber bites with lox and caper cream cheese. Actually, I haven't met anyone who hasn't happily devoured them!With all the food restrictions these days, this simple appy is a welcome addition to any potluck or party - a super simple, gluten-free appy or snack, combining classic flavors: smoked salmon lox, capers, red onion and cream cheese (you won't even miss the bagel!) 

Cucumber Bites with Lox and Caper Cream Cheese

A delicious gluten-free, crowd pleasing appetizer! Makes about 12-15 pieces.
Ingredients
  • 12-15 slices of cucumber
  • 6-8 slices of wild sockeye salmon lox (cold smoked salmon)
  • 1/4 cream cheese (I use [url href="http://modernhippiehw.com/wp/2014/02/08/herb-garlic-yogurt-cream-cheese/" title="Herb and Garlic Yogurt Cream Cheese"]homemade yogurt cream cheese[/url])
  • 2 tbsp [url href="http://modernhippiehw.com/wp/2014/02/09/homemade-mayo/" title="Homemade Mayo"]mayo[/url]
  • 1 tbsp minced red onion
  • 1.5 tbsp minced capers
  • tsp fresh lemon juice
  • pinch of each, salt and pepper
Instructions
  1. Slice a cucumber into 12-15 rounds, about 1/2 inch thick.
  2. In a small bowl, combine the cream cheese, mayo, red onion, capers, lemon juice and S&P.
  3. Put a little of the cream cheese mixture on each cucumber, add a piece of smoked salmon, then top with another dollop of cream cheese. (I added the cream cheese at the end using a icing bag so it look prettier.)
  4. Refrigerate for about 30 min before serving.
