Blueberry-Banana “Hangover Cure” Smoothie

Today’s guest post is written by a friend, fellow blogger and Certified Holistic Health Coach, Chelsey Benzel! Although I live a relatively clean and healthy lifestyle, yes, there are (rare) times in my life when I let my hair down, get a baby-sitter, have a dance party, and wake up in the morning and say, “Never again!”  But, like my momma always says, “everything in moderation, including moderation.” Thanks to Chelsey’s Blueberry-Banana “Hangover Cure” Smoothie, I no longer have to waste the entire “next day” sloth-ing around…  We’ve all been there. You wake up, your mouth is dry and your…

Cucumber Bites with Lox & Caper Cream Cheese.

I don’t think there anything in the world that my kids love more than these cucumber bites with lox and caper cream cheese. Actually, I haven’t met anyone who hasn’t happily devoured them! With all the food restrictions these days, this simple appy is a welcome addition to any potluck or party – a super simple, gluten-free appy or snack, combining classic flavors: smoked salmon lox, capers, red onion and cream cheese (you won’t even miss the bagel!)

Broccoli Salad with Toasted Almonds and Poppyseed Dressing

Did you know that a 1 cup serving of raw broccoli will provide you with more than 135% of your recommended daily intake of vitamin C, and 255% of vitamin K?? Neither did (I until I Googled it just now)! But that’s not the reason I made this salad. I made it because I was eating chips and drinking beer all yesterday evening at my husband’s birthday-BBQ-Potluck (no one’s perfect!), and I needed to make a delicious, nutritious, raw salad that I would balance out the junk food…even though I know it doesn’t really work like that! I’ll admit it, I’m…

Chocolate-y Blender Muffins {sugar-free, gluten-free}

  Okay, I just can’t keep this recipe to myself any longer. I’ve been making back-to-back batches of these chocolate-y blender muffins for 3 days, and the three of us have been snacking on them for breakfast, lunch and dinner!!! And yes, I said it, I used the word chocolate and breakfast in the same sentence. It’s blasphemy isn’t it? All these years I’ve been bashing Coco-Puffs for claiming that their sugar-filled, chocolate cereal is part of a “complete breakfast.” The nerve of me! But guess what? These muffins are sugar-free and gluten-free…but you would never know it because they’re…

Spelt Flour Pancakes with Strawberry Syrup

For Easter morning, as a special treat, we decided to make these delicious, and surprisingly nutritious, spelt flour pancakes with strawberry syrup. I’m happy to say that they’re kid approved.

Kale and Artichoke Dip

Making this dip really makes me realize how far I’ve come in this transformation to living a cleaner, greener life, as every ingredient in this dish is made from scratch! The only thing that would make it even more awesome would be if I grew the kale…and I just planted some, so in a couple of months that should happen!

Veggie Egg-Muffins

An easy breakfast idea that’s quick to prepare. I’ve made these versatile, little guys for dinner with a side salad, and for breakfast with hash browns and homemade ketchup. Left-overs are great in lunches. In the picture above, I used mushrooms, kale, red pepper, garlic and cheddar cheese. Make your own unique egg-muffins using veggies that you already have in your fridge! And don’t forget to let me know what your favorite combo is–I’d love to get some ideas!

Coconut Curry Seafood Soup

I’m pretty lucky to have two awesome moms, both whom are amazing cooks with their own unique cooking style. I like to think of my cooking style as a nice combo between the two. This Coconut Curry Seafood Soup recipe was given to me by my step-momma, Arla, who like me, loves to experiment with multi-cultural cuisine.

Sprouted Spelt Banana Bread

Seriously, who doesn’t like banana bread? It’s easy to make, a great way to use up ripe bananas, healthy-ish (when the right ingredients are involved), and everybody likes it–win-win all around! The sprouted spelt banana bread in the picture is already half gone–only two minutes after this sexy loaf finished his photo shoot. As I write this, my husband shouts, “husband-approved,” and my daughter is covered in crumbs, with our mini-daschund, Ladybug, trailing behind her, which means that this sprouted spelt banana bread, healthy substitutions and all, is a success.

Garlic and Onion Powder

Making your own onion and garlic powder is so much easier than you may think and the results are incredible. What I love about being able to make my own seasonings is that you can hand select your ingredients and know exactly what’s in them (and what’s not). There are no hidden additives, preservatives or MSG; only fresh,
