I don’t think there anything in the world that my kids love more than these cucumber bites with lox and caper cream cheese. Actually, I haven’t met anyone who hasn’t happily devoured them!
With all the food restrictions these days, this simple appy is a welcome addition to any potluck or party – a super simple, gluten-free appy or snack, combining classic flavors: smoked salmon lox, capers, red onion and cream cheese (you won’t even miss the bagel!)
- Slice a cucumber into 12-15 rounds, about ½ inch thick.
- In a small bowl, combine the cream cheese, mayo, red onion, capers, lemon juice and S&P.
- Put a little of the cream cheese mixture on each cucumber, add a piece of smoked salmon, then top with another dollop of cream cheese. (I added the cream cheese at the end using a icing bag so it look prettier.)
- Refrigerate for about 30 min before serving.
